320 Room Miami Beach Luxury Re-branded Resort Renovation
NEXT! was recently engaged by a West Coast based REIT with a market value over $2B to lead a complete food and beverage renovation at a landmark, 350 room resort on Collins Ave in the mid-beach neighborhood of Miami. NEXT! developed the food and bar concepts, oversaw the kitchen design, developed the proformas, and identified and contracted a celebrity chef for the signature restaurant and bar. The grand re-opening is scheduled for 2024.
Hawaiian Luxury Resort Deep Dive
A recently re-flagged and renovated five-star, five Diamond resort found itself burdened by higher than expected demand, labor shortages, increasing COGs and a nascent food and beverage offering. NEXT! was brought in to assist with identifying and prioritizing opportunities across the F&B division leading to revenue increases of $5M and documented product and labor cost savings of 120 basis points.
PE owned UK Based Themed Hotel & Entertainment Brand
Recently acquired by one of the largest private equity funds in the world, this brand found itself on the precipice of growth, but lacking many of the building blocks to expand successfully. NEXT! was engaged by the PE firm to assist with establishing a road map for growth including new replicateable concepts, kitchen, bar and dining room design and purchasing guidelines that fit a new, leaner labor model. Overseeing four renovations, NEXT! applied our skills to guide the planning and execution phases, creating a design and operations blueprint that can be applied to on-going acquisitions.
420 Room Berlin Hotel Renovation and Re-Flagging
Stalled by the pandemic, this hotel engaged NEXT! to lead its restaurant and bar renovation. Assisting with the concept direction, menu development & design and bar programming, NEXT! resourced the project and helped accelerate the renovation to achieve its scheduled June 2023 grand reopening.
18 Property, US, Canada and UK Waterpark and Hotel Company
During a three-year engagement, NEXT! embedded our team members into this client’s corporate F&B team to establish systems, develop new concepts, refine existing offerings, and lead the selection, implementation, and execution of an enterprise-wide e-purchasing, inventory, and point-of-sale systems. The result was clear line of site for C-suite, regional and unit level into operations, leading to quicker decision making, more consistent offerings and growth of top line revenues and GOP.
US Based, 160 Store, High-end Grocer and Specialty Market
Recently acquired by a large PE firm, this high-end 160 store grocery chain found itself needing a newly relevant store design and layout for its upcoming expansion into the Southern states. NEXT! was engaged to re concept and project manage every aspect of the engagement from concept creation to interior design to kitchen and equipment layout to training; with the goal of creating a template for future store development. NEXT! delivered the new store template which is now being used to expand the chain across the South and guide renovations of existing stores.
PE Owned Hotel Conversion in Madrid, Spain
Working with the private equity owners and their asset management team, NEXT converted a passe mid-market hotel into the largest flagship hotel in this international brand’s portfolio. NEXT’s focus was the renovation of meeting space, mezzanine rooftop bar and kitchen and converting the sleepy lobby into a highly themed and branded bar.
